Recipe: Lemon Coconut Loaf

Let it not be said that I allow the recipes section of my blog to fall completely by the wayside. What makes inspiration difficult to come by is one common issue: repetitive meal planning. Luckily with the new slew of friends to make at graduate school, I have more than enough reasons to get in the kitchen and bake. This past week I even jumped a bit out of my comfort zone and went for something “non-chocolate.”

Recently I subscribed to a newsletter called Girls Night In, and they talked about an amazing recipe on Orangette about Lemon Coconut Loaf. Let’s just say, I tried it with some alterations and it was incredible.


  • 1.5 cups flour
  • 2 teaspoons baking powder
  • 3/4 tsp salt
  • 1 1/4 cup sugar
  • 2 tbsps freshly grated lemon peel
  • 3/4 cup Greek yogurt
  • 1/2 cup coconut oil, melted
  • 2 large eggs
  • 1/2 cup unsweetened coconut flakes
  • 2 tbsp fresh lemon juice


  • For bread, things are pretty simple. You’ll start by preheating your oven to 350, butter up the sides of a bread loaf pan – and start prepping your materials
  • Put together all of the dry ingredients (except coconut flakes) first and shift together
  • Then mix together all of the wet ingredients
  • Slowly add wet to dry until just combined and then put in the bread pan
  • Toss in the oven for 50-55 minutes or check with a toothpick how done it is
  • Eat 🙂
