One of things I love about this recipe is its lack of one. After doing some serious research into what was the simplest recipe that could use peanut butter, made some kind of baked good, and didn’t require me to buy many extra ingredients – I was left with two reflections. 1) as long as I used the same proportion of peanut butter to sugar, it would follow the majority of recipes online and 2) This seemed suspiciously easy.
But who am I to complain when a recipe is easy? So there I was, Monday night, and I set about making simple peanut butter cookies out of
- 1 cup of sugar (approx)
- 1 cup of peanut butter, smooth (approx)
- 1 egg
And tossed them in the oven at 175C for 10 ish minutes. Granted the recipe said it would be 6-8 minutes, but I didn’t much fancy the cookies just being lumpy bits of just cooked egg holding together two sugars. Hence – a bit longer did for me. I brought these cookies to work the next day and ta-da they were a huge hit. They reminded me a bit of shortbread texture, insanely delicious and crumbly – and if you have these ingredients lying around your house (and I’m sure you do) – then there’s no question you should be making these cookies to cater some goodwill amongst your coworkers.
