Recipe: Peaches and Bananas Covered in Chocolate
- 1 peach, cored and sliced
- 1 banana, sliced
- Dollops and honey and coconut oil (or just normal oil)
- 2 squares of milk chocolate baking chocolate
- Chopped walnuts
If you’re wondering whether this recipe is as simple as it sounds, you are not incorrect. Sometimes, we all have the sweet tooth – and I, for one, am not willing to bake my heart out when it’s late on Thursday night. Luckily, this takes around 20 minutes tops and so I tell myself… it has fruit, so it must be healthy! Maybe you can tell and maybe you can’t, food photography is not perfectly suited to this recipe, but it’s doesn’t really matter, because it’s so delicious – you just kind of forget. If you feel the need to try this with other fruits, like pears and the sort – tell me how the flavors work out! I’m so curious.
- Slice and core your peach, and slice your banana. Then, place your pan on the stove (a smaller one will work fine), and let it heat up. Add a dollop of coconut oil and honey (raw is always better). Preheat the oven to 200C. While that’s going on, cut up your baking chocolate and walnuts into smallish pieces. It’ll melt anyways though, so whatever your heart desires is fine.
- Let the honey and oil sizzle together for a bit before adding the peaches and bananas together. Let that eat up all of the honey for maybe 2-3 minutes.
- Then add the best part of the recipe: the chocolate. It pretty much immediately melts onto your fruit. Give that a moment to semi-melt, and then throw on your walnuts.
- Place the whole pan in the oven for 10-15 minutes. Admittedly, I could only wait 7 minutes… but pro tip, if you want your fruit to be done sooner, just make thinner slices.
- You’re waiting at this point for the walnuts to toast, so that’s what your eyes should be on (and making sure the chocolate doesn’t burn).
- Take it out of the oven, give it a whiff, and then eat the whole thing.
We’re not talking high-bakery here, people. Part of the reason I’m really into putting all of my desserts in the oven is because there’s something about skillet desserts. They are simple, almost impossible to mess up, and utterly delicious. My current obsession is taking in baked goods to my coworkers, so this doesn’t necessarily fit the bill.
