Last week was no normal week. Forced out of my normal routine, I attended my program’s mid-year seminar in Frankfurt during the weekdays. There was a lot of bureaucracy, wasted time and nonsense… as was expected. What did I learn from a week of group meetings? Absolutely nothing. Thankfully, I got to visit Checkpoint Alpha, the station which was the most vulnerable point in the Western lines in Germany during the Cold War against the Soviet Union – and it was pretty fantastic.
But ultimately, the week turned over a new leaf on Friday when I left for Gdansk with my friend Tay. We spent around eight hours overnight on a bus from Berlin to Gdansk, and when we arrived in the morning – it was absolutely freezing (around 15 degrees Fahrenheit). Note to you: Maybe wait a couple of months for Gdansk. We walked around, and you can see some of the beautiful scenery from my photo-story (Here’s one). It was probably one of my more favorite cities, even though it took around 20-30 minutes to walk through in total. We checked out some restaurants, tried our hand at Pierogis, and ate waffles. I can even imagine that in summer (when you aren’t always on the search for a cafe), it is insanely beautiful. After another overnight 8-hour bus ride, we got back to Berlin and I couldn’t be happier.
Besides everything being fantastic travel-wise, I am very excited for normalcy. Working on my journalism courses, going to yoga classes, the gym, cooking, and beginning work in a couple weeks – there is nothing more I’d rather have going for me right now. Speaking of cooking (by the way), a good little recipe is below (and I promise that without picture, it was delicious!)
Healthy Protein-High Green Lunch Bowl
- Half a Head of Lettuce (Coarsely Chopped)
- Lentils (1/4 cups)
- 12-15 Brussel Sprouts
- Sunflower Seeds (1 tbsp)
- Curry-Mango Tofu (100g)
- Green Curry Paste (1 tsp)
- Cayenne Pepper
- Boil together Brussel Sprouts and Lentils until cooked (10-15 min)
- Put together the Lettuce, Lentils, Brussel Sprouts, Sunflower Seeds, and Chopped Tofu
- Mix the sauce with water to create a dressing
- Put together and Bam! Quick, easy, and non-stress lunch
